Yogurt Parfait

Parfaits have a marvellous taste and texture, but many are loaded with sugar and leaves one craving for more. Here’s my protein-inspired option with fruit, nuts, and dark chocolate chips.



Parfaits are quick and easy. Choose your favourite yogurt - dairy or dairy free - and add some delicious fruits and my favourite grain free cookies! For an extra special treat you can add some chocolate chips or shredded coconut!


Here is what I did for the grain free cookies~


Dry Ingredients:

  • 1 cup almond and coconut flour

  • 1/4 cup of flax

  • 1/4 cup raw sunflower seeds

  • 1/4cup pumpkin seeds

  • 1/4 cup unsweetened coconut flakes

  • 1/2 cup raisins or other dried fruits chopped

  • 1tbsp cinnamon

  • 1tsp baking soda

  • Sea salt to taste


Wet Ingredients:

  • 2 eggs (for vegans: 2tbsp ground chia with 3 tbsp warm water)

  • 1/4 cup coconut oil melted, vanilla extract

  • 1/4 cup honey or pure maple syrup

Directions:

  • Blend wet ingredients with a hand mixer and combine well with dry ingredients

  • On a cookie tray lined with cookie sheet, press the mixture down or make small cookies

  • Bake at 325 F for 15 minutes

  • Cool, crumble and enjoy as a yogurt parfait crumble or as healthy cookies!
