Here is a recipe that I love ❤️

Of course! Here's a modified version of the recipe without peanuts and coconut:

Ingredients:

- 1/4 cup flax seeds

- 2-3 dried red chilies (adjust according to your spice preference)

- 1 tablespoon sesame seeds (optional)

- 1 small garlic clove

- 1 small piece of tamarind (about 1/2 teaspoon tamarind paste)

- Salt to taste

- Water, as needed

Instructions:

1. Dry roast the flax seeds and sesame seeds in a pan over medium heat until they become aromatic. Remove from heat and let them cool.

2. In the same pan, dry roast the dried red chilies until they become crisp. Remove and set aside.

3. In a blender or food processor, combine the roasted flax seeds, sesame seeds, dried red chilies, garlic clove, tamarind, and salt. Grind into a coarse powder.

The chutney can be stored in a dry cool place and enjoyed as a dry condiment

Another variation:

For a wet chutney: follow the above instructions followed by tempering :

For Tempering:

- 1 tablespoon oil (preferably sesame oil or any neutral oil)

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- Few curry leaves

  1. Add a little water and blend again until you get a smooth chutney consistency. Adjust the water quantity as needed to achieve your desired consistency.

  2. In a small pan, heat the oil for tempering. Add the mustard seeds and let them splutter. Then add the cumin seeds, asafoetida, and curry leaves. Fry for a few seconds until aromatic.

  3. Pour the tempering over the prepared chutney and mix well.

  4. Transfer the Flax Seed Chutney to a serving bowl and enjoy it with your favorite snacks or meals!

Variations: add coconut and or peanuts to the chutney.
