Shakshuka is one of my favourite recipes. Shakshuka is a mixture of veggies and herbs with poached eggs.
Ingredients:
1 medium onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, finely chopped
2 tsp oregano
1 tsp cumin powder
1/4 tsp cayenne or more
3 to 4 plum tomatoes diced
6 free range organic eggs
Sea salt and pepper, to taste
1 small bunch fresh parsley, chopped
Crumbled feta (optional)
2 tbsp of avocado oil
Method:
Heat avocado oil in a large sauté pan on medium heat.
Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes translucent.
Add garlic and spices and cook an additional minute.
Add chopped tomatoes and juice and break down the tomatoes using a large spoon.
Season with salt and pepper and bring the sauce to a simmer.
Once the sauce is thick and aromatic, use a spatula to make small holes in the sauce.
Crack the eggs into each well.
Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
Garnish with more parsley.
Enjoy it with toast and avocado on the side.
