Mango Salad


  • 1 mango, sweeter but firmer, diced and pit removed

  • 1/2 red pepper, diced (or another colour of your choice)

  • 1 scallion, finely chopped

  • A handful of cilantro and mint, finely chopped

  • Cayenne pepper or red chili, finely chopped

  • 1 tsp of fish sauce or mirin

  • 1/2 a lime juice

  • Sea salt


  1. Mix all the above ingredients.

  2. Let it marinate for an hour or so to get all the flavours to assimilate.

  3. Top it on your favourite protein like grilled fish, grilled poultry, grilled tofu, etc.
