Delicious any day of the week - not just Taco Tuesdays!

This is a quick and easy lunch to make! It’s so simple but it is a family favourite and my go-to when I want a light lunch. It is also perfect for anyone looking for a vegetarian alternative to tacos. My family loves to eat meat, especially in their tacos, but they all loved this dish!
Ingredients:
1 cup of cooked black beans
1/2 finely chopped onion (or onion powder)
2 garlic cloves minced (or garlic powder)
2 tsp oregano
2 tsp paprika
2 tsp cumin seeds powder
1 tbsp of avocado oil
1 sweet potato
Tortillas of your choice
Directions
Preheat the oven to 425°F
On hot cast iron, add the oil, onions, and garlic and stir fry till evenly browned
Put the sweet potato in the oven for 30 minutes
Add the beans and all the seasonings
Stir and add in salt
Cut the sweet potatoes into cubes and add them in
Cover and put the heat on low for 10 minutes
Heat up the tortilla and serve
Leftovers? A great idea for lunch the next day is to turn your leftovers into a taco salad! Grab some guacamole, greens, nutritional yeast, cheese, or mango! Yum!
