Black Bean Tacos

Delicious any day of the week - not just Taco Tuesdays!

This is a quick and easy lunch to make! It’s so simple but it is a family favourite and my go-to when I want a light lunch. It is also perfect for anyone looking for a vegetarian alternative to tacos. My family loves to eat meat, especially in their tacos, but they all loved this dish!


Ingredients:

  • 1 cup of cooked black beans

  • 1/2 finely chopped onion (or onion powder)

  • 2 garlic cloves minced (or garlic powder)

  • 2 tsp oregano

  • 2 tsp paprika

  • 2 tsp cumin seeds powder

  • 1 tbsp of avocado oil

  • 1 sweet potato

  • Tortillas of your choice

Directions

  • Preheat the oven to 425°F

  • On hot cast iron, add the oil, onions, and garlic and stir fry till evenly browned

  • Put the sweet potato in the oven for 30 minutes

  • Add the beans and all the seasonings

  • Stir and add in salt

  • Cut the sweet potatoes into cubes and add them in

  • Cover and put the heat on low for 10 minutes

  • Heat up the tortilla and serve

Leftovers? A great idea for lunch the next day is to turn your leftovers into a taco salad! Grab some guacamole, greens, nutritional yeast, cheese, or mango! Yum!
